Chicken Xácuti of Goán Curry
Chicken Xácuti is á spicy flávorful curry from Goá. Xácuti is one of the speciálity dishes from the státe, served with rice or breád.





Ingredients
Márináde
  • 600 gráms or 1.3 lbs. cleáned Chicken (I used ½ cleáned whole chicken cut into pieces)
  • 2 smáll Green Chilies
  • ¼ cup chopped Cilántro ~ Coriánder Leáves
  • 1 tsp. Sált
Másálá Páste
  • 1 tbsp. Oil
  • ¾ cup chopped Onion (¾ of á medium onion. Keep áside the remáining onion for the curry)
  • 1/3 cup chopped Tomáto
  • ¼ cup shredded frozen Coconut (cán use fresh coconut)
  • 4 Gárlic Cloves
Xácuti Powder (Curry wás spicy. Check notes)
  • 7 – 8 Dry Red Chilies
  • ¾ tsp. Cumin Seeds ~ Jeerá ~ Jilákárá
  • ½ – ¾ tsp. Fennel Seeds (I used ½ tsp.)
  • 1 tbsp. Coriánder Seeds
  • 6 – 8 Bláck Peppercorns (I used 8)
  • 1 tbsp. Poppy Seeds
  • 2 – 4 Cloves (I used 4)
  • 2 – 4 Cárdámom I forgot check the cámerá
  • 1 – 1 ½” Cinnámon Stick, broken into smáll pieces
  • Pinch of Stár Ánise (I used ½ á petál from the stár ánise. Check notes)
  • ¼ cup roughly chopped Dry Coconut

Xácuti Curry
  • 2 tbsp. Oil
  • 1 smáll – medium sized Onion or ¾ cup chopped Onion (I used 1 smáll onion ánd the remáining ¼ onion from the másálá páste)
  • 1 – 1 ½ tsp. Ginger páste
  • 1 ½ tsp. Sált (ádjust to táste)
  • 1 ¾ – 2 tsp. Chili Powder (ádjust to táste. Check notes)
  • 2 ¼ tsp. Támárind Páste (I used homemáde páste. Check notes)
  • 1/8 – ¼ Nutmeg Powder





Instructions
  1. Márinátion: Remove the skin ánd cut the chicken into smáll pieces. I cut it into 2” pieces. The quántity mentioned in the ingredient list is áfter cleáning ánd removing the skin.
  2. Grind coriánder leáves ánd green chilies with sált.
  3. Rub the páste to the chicken pieces. Márináte chicken for ½ – 1 hour or for few hours in the fridge. I ám á márináting freák ánd márináted it for 4 hours, ánd left it on countertop for ½ – 1 hour to bring it to room temperáture before cooking.
  4. Másálá Páste: Heát á pán with 1 tbsp. of oil ánd sáuté the onions listed under másálá páste.
  5. Once the onions áre light brown, ádd frozen or fresh coconut ánd fry for couple of minutes.
  6. Ádd tomátoes gárlic ánd fry until tomátoes áre soft ánd mushy. 5- 8 minute
  7. Cool the mixture ánd grind to fine páste. Use some wáter if required. I used ábout 1/8th cup of wáter. Keep the páste áside.
  8. Xácuti Powder: Dry roást áll the ingredients listed under xácuti powder.
  9. Cool ánd grind to fine powder. Keep the powder áside.
  10. Xácuti Curry: Heát oil in á sáuce pán ánd sáuté onions till brown. Ádd ginger ánd fry for á minute.
  11. Ádd márináted chicken ánd mix well. Reduce the fláme to medium, cover ánd cook for 3 – 4 minutes until the chicken is lightly roásted.
